This is my absolute FAVORITE side dish for Thanksgiving!
Sweet Potato Casserole
Ingredients
3 large sweet potatoes/yams, pealed and cubed
1 cup sugar
1 tsp salt
1 tsp vanilla
4 eggs
1 cup evaporated milk
1/2 cup butter
- Topping
1 cup brown sugar
1 1/2 cup flour
1 cup pecans
1/3 cup coconut
1/2 cup melted butter
Directions
- Peel and dice potatoes
- Boil sweet potatoes, drain and mash OR instead of boiling, steam them in Ziploc steam bags! It is so much quicker and one less dirty pot. Not to mention it will also keep out the extra moisture.
- After mashing, mix potatoes together with sugar, salt, vanilla, eggs, milk & butter.
- Pour into a greased 9×13 baking dish.
- Mix together brown sugar, flour, pecans, and coconut with melted butter until crumbly.
- Place on top of sweet potatoes and bake at 350°F for 30-40 minutes
- Or instead of topping, bake sweet potato mixture 30 minutes
- Then top with miniature marshmallows
- Put back in the oven under broiler until marshmallows are lightly browned.
