Such a delicious treat in the form of a cupcake.  They are so good!

Cocoa Cupcakes with Marshmallow Frosting

Ingredients

  • Cupcakes
  • 1 box Duncan Hines Swiss Cake Mix

  • 1 small box box chocolate pudding mix

  • 4 eggs, beaten

  • 1/2 cup water

  • 1 cup sour cream

  • Frosting
  • 3 cups confectioners sugar, sifted

  • 1/2 cup butter, softened

  • 1/2 cup white chocolate chips

  • 1/4 cup whole milk

  • 1 jar marshmallow cream

  • 1 tsp vanilla

  • 1/2 tsp kosher salt

Directions

  • Preheat oven to 350°F
  • Grease or line two cupcake tins
  • In a large bowl stir together cake mix and pudding mix
  • Beat in eggs, water, and sour cream until incorporated
  • Fill each cupcake tin 3/4 full
  • Bake for 25-30 minutes
  • Remove from oven and cool completely before frosting
  • In a separate bowl blend confectioners sugar and butter
  • In a small bowl add white chips and milk
  • Microwave on high for 20-30 seconds and stir until chocolate is melted
  • Blend in melted chocolate, marshmallow, vanilla and salt
  • Whip until fluffy and store in the refrigerator until ready to frost cupcakes
