I love a good meal you can put in a slow cooker and not think about until dinner time.  It is especially nice not to have to turn the oven on during the summer.  This is a good one!
Slow Cooker Chicken Quesadillas
Ingredients
4 chicken breast, frozen
14 oz can Rotel Mexican (with lime juice and cilantro)
8 oz cream cheese, room temperature
salt and pepper to taste
2 cups Mexican blend cheese
1 pkg uncooked flour tortillas by TortillaLand
Directions
- In a small bowl whisk rotel with cream cheese
- Grease slow cooker and place frozen chicken in the bottom
- Pour cheese mixture over chicken
- Cook on high for 4 hours or low for 6 hours
- Shred chicken and add salt and pepper to taste
- Place two tortillas on a heated griddle and lightly brown both sides
- Spread chicken mixture and a handful of shredded cheese on one tortilla
- Cover with second tortilla and warm for 1-2 minutes until cheese is melted
- Remove from griddle and cut into four triangles with a pizza cutter
