 I love a good meal you can put in a slow cooker and not think about until dinner time.  It is especially nice not to have to turn the oven on during the summer.  This is a good one!

Slow Cooker Chicken Quesadillas

Ingredients

  • 4 chicken breast, frozen

  • 14 oz can Rotel Mexican (with lime juice and cilantro)

  • 8 oz cream cheese, room temperature

  • salt and pepper to taste

  • 2 cups Mexican blend cheese

  • 1 pkg uncooked flour tortillas by TortillaLand

Directions

  • In a small bowl whisk rotel with cream cheese
  • Grease slow cooker and place frozen chicken in the bottom
  • Pour cheese mixture over chicken
  • Cook on high for 4 hours or low for 6 hours
  • Shred chicken and add salt and pepper to taste
  • Place two tortillas on a heated griddle and lightly brown both sides
  • Spread chicken mixture and a handful of shredded cheese on one tortilla
  • Cover with second tortilla and warm for 1-2 minutes until cheese is melted
  • Remove from griddle and cut into four triangles with a pizza cutter
