A wonderful weeknight or anytime meal. It is fresh and full of flavor. I also like to make this dish with my left over ham from Easter.
Ham Penne
Ingredients
8 oz Penne Pasta
2 cups fully cooked ham, cubed
1 large Red or Orange Sweet Pepper, chopped
1 medium onion, chopped
1 Tbsp dried parsley
1/2 tsp dried basil
1/4 tsp dried oregano
2 Tbsp olive oil
2 Tbsp butter
1 tsp minced garlic
2 cups chicken broth
1 Tbsp lemon juice
1/2 cup shredded Parmesan Cheese for garnish
Directions
- Saute ham, red pepper, onion, garlic, parsley, basil, and oregano in oil and butter for 4-6 minutes or until vegetables are tender
- Stir in broth and lemon juice
- Bring to a boil
- Add pasta and cook according to package directions
- Sprinkle with cheese to garnish.
