A wonderful weeknight or anytime meal.  It is fresh and full of flavor. I also like to make this dish with my left over ham from Easter.

Ham Penne

Ingredients

  • 8 oz Penne Pasta

  • 2 cups fully cooked ham, cubed

  • 1 large Red or Orange Sweet Pepper, chopped

  • 1 medium onion, chopped

  • 1 Tbsp dried parsley

  • 1/2 tsp dried basil

  • 1/4 tsp dried oregano

  • 2 Tbsp olive oil

  • 2 Tbsp butter

  • 1 tsp minced garlic

  • 2 cups chicken broth

  • 1 Tbsp lemon juice

  • 1/2 cup shredded Parmesan Cheese for garnish

Directions

  • Saute ham, red pepper, onion, garlic, parsley, basil, and oregano in oil and butter for 4-6 minutes or until vegetables are tender
  • Stir in broth and lemon juice
  • Bring to a boil
  • Add pasta and cook according to package directions
  • Sprinkle with cheese to garnish.
