I am always looking for good side dishes.  This is one, and it is so much easier than you think.  It is really good served warm or cold.

Southwestern Quinoa Salad

Ingredients

  • 1 tsp vegetable oil

  • 1 cup onion, chopped

  • 3 tsp chopped garlic

  • 3/4 cup uncooked quinoa

  • 1 1/2 cup vegetable or chicken stock

  • 1 tsp ground cumin

  • salt and pepper to taste

  • 1 cup frozen corn kernels

  • 1 can black beans, drained and rinsed

  • 1/2 cup chopped fresh cilantro

  • 1 fresh lime, zest & juice

Directions

  • Heat oil in medium saucepan over medium heat
  • Stir in onion, garlic, and lime zest
  • Saute until onion is translucent
  • Mix quinoa and stock into saucepan
  • Season with cumin, salt, and pepper
  • Bring mixture to a boil
  • Cover, reduce heat, and simmer for 20 minutes
  • Stir in frozen corn, beans, and cilantro
  • Squeeze juice from fresh lime over mixture
