I am always looking for good side dishes. Â This is one, and it is so much easier than you think. Â It is really good served warm or cold.
Southwestern Quinoa Salad
Ingredients
1 tsp vegetable oil
1 cup onion, chopped
3 tsp chopped garlic
3/4 cup uncooked quinoa
1 1/2 cup vegetable or chicken stock
1 tsp ground cumin
salt and pepper to taste
1 cup frozen corn kernels
1 can black beans, drained and rinsed
1/2 cup chopped fresh cilantro
1 fresh lime, zest & juice
Directions
- Heat oil in medium saucepan over medium heat
- Stir in onion, garlic, and lime zest
- Saute until onion is translucent
- Mix quinoa and stock into saucepan
- Season with cumin, salt, and pepper
- Bring mixture to a boil
- Cover, reduce heat, and simmer for 20 minutes
- Stir in frozen corn, beans, and cilantro
- Squeeze juice from fresh lime over mixture
