I know it’s still hot outside for some of us, but I love this soup so much, I’m sure we will be having this often into this fall and winter.
Creamy Tomato Tortellini Soup
Ingredients
2 Tbsp Olive Oil
2 tsp Minced Garlic
2 Tbsp Sun-Dried Tomatoes, chopped
1 tsp Onion Powder
1 Tbsp Italian Seasoning
2 10 3/4 oz cans Condensed Tomato Soup
2 cups Half-and-half
2 cups Chicken Stock
1/2 tsp Salt
1/2 tsp Pepper
1 9 oz bag Cheese Filled Tortellini
Directions
- Saute garlic with the olive oil and sun-dried tomatoes, onion powder, and Italian seasoning in a large stockpot over medium heat.
- Add tomato soup, half and half, and chicken stock and bring to a simmer.
- Once simmering, drop tortellini into the soup.
- Cook according to the package directions.

I love this recipe! I add double the amount of tortellini.
This has become a staple at our house. We really love it. I omit the dried tomatoes, onion and garlic.
