It’s hard to believe it, but summer is coming.  That means cookouts with all the fixin’s and this a great compliment to almost any of your BBQ dishes, but can also stand on its own. I love that it can be made quickly but also packs a ton of flavor.

This Asian Slaw is colorful, crunchy, vibrant and a little tangy and provides a great alternative to those heavy mayo laden salads. This recipe is also easy enough that one of our kids can make it. My kids love Ramen and incorporating it into this dish not only makes it unique but also adds just enough of that extra seasoning without having to worry about going out and buying extra spices for just one dish.

Ingredients

  • 1 bag (3 oz) oriental ramen

  • 2 Tbsp butter

  • 12 bag bag broccoli slaw

  • 2 Tbsp sunflower seeds

  • 1/4 cup cashews

  • Dressing
  • 1/2 cup canola oil

  • 3 Tbsp brown sugar

  • 3 Tbsp apple cider vinegar

  • 1 ramen seasoning packet

Directions

  • Put ramen noodles in a bag and crush
  • Melt butter over low heat in a small skillet
  • Add crushed noodles and cashews to skillet
  • Sauté, stirring occasionally
  • Whisk together oil, brown sugar, vinegar, and ramen seasoning packet
  • Place shredded broccoli into separate bowl
  • Mix in crushed noodles, cashews, and sunflower seeds
  • Pour dressing over salad and toss to coat
  • Let sit in fridge at least an hour
