So simple, but so good!
Fried Rice
Ingredients
4 cups cold cooked rice
2 large eggs
1/2 tsp salt
1/4 tsp pepper
4 Tbsp canola oil
1/2 cup thinly sliced green onion
3 Tbsp soy sauce
1 cup frozen peas and carrots, thawed
1/2 cup diced cooked ham, chicken, or shrimp (optional)
Directions
- Place rice in large bowl and break up any lumps and set aside
- Beat eggs in separate bowl with salt and pepper and set aside
- Pour the oil into a wok and place over medium-high heat
- When the oil is hot, add green onion
- Stir in eggs and scramble
- Add rice and mix thoroughly
- Pour soy sauce evenly over the mixture
- Add peas, carrots, and meat if desired and combine
- Stir constantly until it is mixed and heated through and serve
