Fried Rice

Ingredients

  • 4 cups cold cooked rice

  • 2 large eggs

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 4 Tbsp canola oil

  • 1/2 cup thinly sliced green onion

  • 3 Tbsp soy sauce

  • 1 cup frozen peas and carrots, thawed

  • 1/2 cup diced cooked ham, chicken, or shrimp (optional)

Directions

  • Place rice in large bowl and break up any lumps and set aside
  • Beat eggs in separate bowl with salt and pepper and set aside
  • Pour the oil into a wok and place over medium-high heat
  • When the oil is hot, add green onion
  • Stir in eggs and scramble
  • Add rice and mix thoroughly
  • Pour soy sauce evenly over the mixture
  • Add peas, carrots, and meat if desired and combine
  • Stir constantly until it is mixed and heated through and serve
