Have you ever had one of those jammed packed, crazy busy days where you almost go cross-eyed?  And at the end of the day, you don’t have the energy to cook for yourself, let alone your family? Who am I kidding? If you are like me, that describes almost every day. When I know a long day is ahead or when my family wants some good comfort food for dinner, this is one of our no-fail go-to dinners.

This slow cooker recipe is AMAZINGLY easy but so good. It only takes a couple of minutes to prep, and then you can forget about it… until that aroma hits you. Have you ever walked into the kitchen and your nose is assaulted with the smells of joy and happiness and it gets your stomach telling you it is time to eat NOW? Well this is that kind of dinner.

One of the things we try and do is to get our kids involved with the cooking and with only 5 ingredients, this recipe is easy enough for our 11-year-old to do on her own.

The secret to getting the creamy sauce and chicken to be so tender and juicy is cooking it slow and for a long time.  You don’t have to thaw the chicken.  We always use frozen chicken breasts and it comes out perfect every time.

We love the diversity of this dish as well because you can change it up and use it over rice, or mashed potatoes, or even biscuits.  If it’s been a really long day and you don’t want to make any of those, you can also use toast.  That is super simple and still quite good.

Ingredients

  • 4 boneless skinless chicken breast, frozen

  • 4 Tbsp butter

  • 1 pkg dry Italian dressing mix

  • 2 cans cream of chicken soup

  • 8 oz (8) cream cheese

Directions

  • Place frozen chicken in the slow cooker
  • Add butter, Italian dressing mix, cream of chicken soup, and cream cheese into the slow cooker
  • Cook on high for 4 hours OR low for 6 hours, stirring occasionally
  • When chicken is done either shred or cut in big chunks
  • Serve over rice, biscuits, or mashed potatoes
